Shared Kitchen FAQs

The commissary and shared kitchens became necessary since the laws have changed several years ago.  Based on the current laws it is required to for the food producing businesses to have a food service permit, while before any restaurant kitchen could have been used.

Steps necessary to use the shared kitchen facility:

1. Sign the contract with a Shared Kitchen.
2. Take the contract to the Health Department and Business License Department in order to obtain food service permit and business license.
3. If you are producing under the FDA or USDA you will submit your plans to them.
4. Your Shared Kitchen can be used as a business address.

Each lessee should have their own business insurance and liability insurance, and follow Independent Kitchen Solutions list of rules and regulations

The facility will be subject to health inspection and each individual lessee that has the contract will be the subject to their own health inspection.  The main kitchen will have a licensed food service manager identified to the health department. 

Food Trucks:

Food Truck Commissary kitchens are required for any food truck to operate freely and legally.

Your Food Truck and your Commissary Kitchen or Base of Operations must equal a full and complete kitchen for the products that you are producing.

Why you should use the commissary kitchen for The Food Trucks? Well you have to have the following things in order to operate, just to name a few:

1. Dumpster
2. Grease Trap
3. Waste Dump - A place to attach the hose to dump the waste
4. Potable (fresh) water supply
5. Covered loading area
6. Truck wash
7. Fenced lot for the food trucks
8. If push cart is used it should be stored on the premises
9. Employee restrooms are provided on the premises

Food Truck and Commissary FAQs

Gas is available and you can install a hood vent if you need one.
This can be your business address, as mail will be received for all clients.
